Just a quick post to tell you about an amazing dinner I made myself last week ;)
I did not have any meat or fish on hand so I opted for a vegetarian option.
It looks horrible but seriously, it’s good! You can use any vegetable you have on hand too!
I sauteed zucchinis and mushrooms in some coconut oil and cooked half a sweet potato. I seasoned everything with dijon mustard and salted herbs (Herbes salées du Bas du Fleuve) and poored some almond butter on the veggies. I added a dollop of ricotta cheese for protein and freshness. This meal is full of nutrients AND flavour. Try it!
