Happy hump day everybody!
We woke up to quite a big snow storm over here…I guess winter is finally here…
What better way to feel good than a nice workout and comfort food to boost your energy level. One of my favorite dish is the classic Shepherd’s Pie. But, potatoes, beef and corn is very rich in carbs and fat. So, here is my healthyfied version (whick taste almost the same if not better!).
You will need:
Big oven dish
half a cauliflower cut in florets
about 1/2 cup of milk
1 tbsp butter
2 cans of corn (one regular and one creamy)
2 packages of Yves Veggie Ground Beef
Preheat oven to 400F. Boil cauliflower until tender and add the milk and butter. Mash until desired consistency. Spread the Veggie Beef in your dish, then the corn and then the cauliflower mixture. You can sprinkle some paprika on top and bake for about 30 minutes. You will have about 8 servings of pure comfort with great macronutrients proportions 🙂
